Who says eating healthy can’t taste good? This week’s recipe includes quinoa, a superfood that is both high in fiber and high-quality protein. Quinoa (KEEN-wah) is 100% whole grain, but is technically the ancient seed of a leafy plant related to spinach. It’s also gluten-free!

Vegetarian Banh Mi Pizza

Banh mi is a Vietnamese term for all kinds of bread. In the U.S. when people talk about banh mi, they are usually referring to a Vietnamese sandwich. I’ve been on the lookout for a good vegetarian option, so when I came across this Chickpea Banh Mi Pizza from Dishing Up the Dirt, I had to try it. This recipe is a little fussy because you have to make the sauce, pickle the veggies AND season the chickpeas, but it’s totally worth it.

The Last Voyage of the Sea Wing

My grandmother has always been afraid of water. She once told me that her father lost some relatives in a Lake Pepin disaster and from that point on he was afraid of water. He would fish from shore, never went in a boat, and didn’t have his children learn how to swim – in turn he passed his fear on to his daughter. It wasn’t until the 1970s when she found a letter in a drawer that she learned this relative of her father lost his wife and three children when the Sea Wing capsized on Lake Pepin. When I looked it up, I learned the story that had caused her fear of water was actually one of the largest domestic maritime disasters in U.S. History.

Sweet Peas Classic Neighborhood Pub

Maybe I watched too many episodes of Cheers when I was growing up, but I love a neighborhood bar where I feel like everyone could know my name. That’s the feeling that you get from Sweet Peas. Located on Snelling Avenue in St. Paul, Sweet Peas has a classic bar menu filled with burgers, fries and sandwiches. They’ve added their own touch of intrigue with homemade tater tots (not for the vegetarians in the group), lobster grilled cheese sandwiches, and spicy stuffed pickles. Despite the meat-centric menu, I liked my veggie burger so much I returned for a second visit!
