Power Lunching at the Ecopolitan


It’s not every day that I find someone who will eat raw, vegan food with me, so my recent lunch date with The Best-Good Friend was a really big treat! We eagerly pointed the car towards the Ecopolitan‘s 100% Organic Vegan Raw restaurant.

We started with fresh juice. I loved my Ginger Lemonade and am going to try recreating it at home. Each sip was energizing, bursting with lemon, lime, ginger and apple. The Sweet Beet was invigorating as well with the classic flavors of carrot, apple, kale, ginger and beets.

We shared two entrees in the cheery dining room. We dug into the raw, vegan version of macaroni and cheese which was made from zucchini noodles, creamy “cheese,” fresh herbs, scallions and cashew parmesan. It was tasty, but I loved the Mediterranean Salad with the crunchy flax crackers best.

The downside to our lunch was that we didn’t save room for dessert. We both enjoyed ourselves so much, however, that we plan to go back for that very soon. And while we only had lunch at the Ecopolitan, it’s far more than a restaurant. Visit their bar, natural home and body shop, infrared sauna, oxygen bar and eco-art gallery. They also offer cooking classes and healing retreats.
